Vegetarian Shepherd's Pie


2 TBSP olive oil
3 shallots, minced 
16 OZ fresh mushrooms, sliced
6 carrots, peeled and chopped 
Fresh herbs to taste
(1 sprig of rosemary, thyme, and a bay leaf)
2 TBSP tomato paste
2 TBSP flour
1/2 CUP red wine
1–2 CUP veggie broth
1 TSP salt (more or less to taste)
2 CUP frozen peas
Mashed Potatoes:
6 Yukon gold potatoes 
1/2 CUP Greek yogurt
1/4 CUP butter or olive oil
Salt to taste


1. Make the mashed potatoes: Peel the potatoes. Boil them until fork tender (you want them to mash easily). Drain, mash, and mix in yogurt and butter. Season to taste. 

2. Make the veggies: In a large oven-safe pot, heat the oil over medium heat. Add shallots and sauté until fragrant. Add mushrooms, carrots, and whole herbs (you will pull the herbs out later). Sauté until carrots are softened.

3. Make the gravy: Add tomato paste and flour to the pot and stir. Pour in the red wine and scrape all the browned bits off the bottom of the pan. Let the wine cook out for a minute or two. Slowly add the broth, stirring it in until a gravy starts to form. Season with salt. Simmer over low heat to get it thickened even further.

4. Bake: Remove the herbs. Stir in the peas, spread the mashed potatoes on top (brush with butter to be extra awesome), and bake for 15 minutes at 350. I finished mine on the broil setting for a few minutes to get it nice and brown on top.

5. Serve: Scoop up a hearty serving and live your best cozy life.


1. Gluten Free Variation: Skip the flour and stir in about 3/4 cup mashed potatoes to the veggies and liquid to make a “gravy.” Easy. Tasty.

2. Vegan Version: Use olive oil in place of butter and non-dairy milk in place of the yogurt.

3. Meat Version: Add browned ground meat to the gravy mixture. Yummy!

Healthy Carrot Muffins


2 CUPS rolled oats
8 medjool dates, pits removed
1/2 CUP olive oil
1/4 CUP maple syrup
3–4 carrots, peeled and shredded 
2 eggs
1 TSP baking soda
1/2 TSP cinnamon
Pinch of salt
Walnuts or raisins (optional)


1. Preheat the oven to 350 degrees.
Grate your carrots.

2. Mix all ingredients in a blender until a chunky batter comes together.

3, Pour batter into a greased or lined muffin tin. Bake for 15-18 minutes, until the tops gently spring back when you press into them.

4. Smear warm muffins with butter and/or honey. Attempt not to eat them all. Serve warm or cold ALL DAY LONG.


1. If your dates are on the firm side, soak them in hot water for a bit first so they are easier to blend!

Hello my name is Bianca Colon .I work at the massachusetts Ave project.This is my first time working at this job.It is very fun,I get to work in the garden and help out . I also get to sell the stuff we plant.The first day i came i was helping dig up dirt so they can put it in the barrels . I also saw that everybody was helping out ,no body was laying back.The reason i like this job is because i can help out and be helpful .When we come to the libary we go in the circle and answer a question.I am still shy but after awhile i am going to stop being shy and talk to more people. The staff are very nice.

Hello, my is Barbly YuWar and I'm sixteen year's old I work with the Growing Green Program and this is my second year here. We have
different teams and every week one team does different activities like cooking, going to a soup kitchen to serve food or teach young kids about eating healthy and gardening. But today I just want to tell you about what I do in the Growing Green business group. My role in the business is on the Recipe team. We make the product in our kitchen. The salsa has black beans, corn, garlic, peppers, onions, cilantro, tomatoes and other good things. I like the salsa because it tastes fresh and mild. There are a lot of rules to make our salsa safe for the public so we can sell it. When we made our salsa everyone who is part of our team had to wash their hands and do their part by cleaning the kitchen. We also learn how to work together in teams or in groups. Today we went out to the community and talk to them about our program and our BBQ for Eat In Act Out coming up. As you can see in Growing Green we try to educate others as we are being educated in the program. thats about it for now . . . .

My name is Emanuel Flores.This is my first time working in the M.S.P Growing Greem proyect.I like this job because whe do a lat of activities.I like this job to because the other people help you when you need help,like when you working in the garden in you need help they help you,and when I dont understand a question they help me.That why I like this job.
The growing green project is a great experience in this program . In this week we are having a speacial celebration of eating healthly foods.In the celebration will be giving away foods.Please bring your family and friends to learn more about healthly foods. After you learn about this program you will learn about the right eating habbits.Many examples will show you the way how food is bad for you and good for you.

Hi it's Carisma again. Today in the business part of the Growing Green program we talked about business of course. First, we took a test, just like in school, only it was an open book test. After the test was over we went over it. It was mostly about co-ops, and what is the difference between a co-op and a regular business. The test also required a little knowledge about business plans, as well as kitchen knowledge. Later we got to talk about colors. There is a awful lot of information I was not aware of. There are the primary colors, and secondary colors of course, but there is also a third group of colors called tertiary colors. These colors result when a primary and a secondary color is put together, such as red orange. The group also learned about which colors make people hungry, which colors calm people down, etc. What I found was most interesting was babies seem to like the color red, but cry more longer and louder if put into a room of yellow. I found that this experience has helped me out for when I plan on having kids in my thirties. I now know not to paint the baby room yellow. Talk to you later.

Hello my name is Carisma Robinson, and I am a member of the Growing Green program. This is my first year working at Growing Green, and I have found the experience highly educational. I have had a lot of fun working here. I enjoy coming to work, because Inot only think this program can help me out with my future plans but it also is just so much fun. My most favorite memory is helping out Loaves and Fishes. Loaves and Fishes is a soup kitchen. It was a lot of work but I really enjoyed working there. This was my first time working in a soup kitchen, and it turned out better than I thought it was going to be. I hope to have many more great experiences while here at Growing Green. Hi my name is Thomas Chappell, this is my first year at Growing Green. I enjoy the program it teaches you to take consideration for the community, and kinda forces you to work on a goal to be healthy. Yesterday the Growing Green youth team watched a film call Super Size Me, it was interesting this film was about how unhealthy fast food is (McDonalds) they did an expermint on the food at McDonalds Morgan Spurlock conducted this test he wanted to see what would happen if he was to eat McDonals foe 30 days and 30 nights for breakfasts lunch and dinner. Then at the end of the experiment he went from 185 to 210 and his blood pressure went up very high. Well thats it for today i hope you enjoyed my blog.

My name is Juan Torres. This is my first year in the Growing Green program. So far this has been a great experience working in the garden and working with other people. I like coming to work and doing whatever we have to do to help others. The first week my group went to a Church to help feed those who cant afford food.

Hi my name is Stephen Cordova Jr. This is my first year in Growing Green and I like it alot. It hasbeen a great expirience and it is fun working with the people I work with. My name is Lina Shafie and I am 16 years old. This is my first year working in Growning Green and I like it alot. This is a great experinece for me and I learn alot of things in this program. It teaches me many things and shows me what I could do in life. For example it builds up my character and teaches me how to plant the proper way and also what kinds of food are organic. Today I learned what its like to work as a team and what you need to do to work together. I like working in Growning Green and takeing many experince to my future.

My name is Edwin Andino and I have been with Growing Green for four years and each year has been very interesting. Everyday, I come to work I think to myself, 'it's going to be a good day,' because its just a good place to be. Four years ago I didn't have anything to do with my life. Then Growing Green came into my life and took me out of the streets. I like Growing Green because we do lots of different things, like going to a soup kitchen, gardening and other cool stuff. If I could give someone advise, I would tell them to join Growing Green, if you do it well it will be the best thing to happen in your life.
My Experience Working With Growing Green

My name is Barbly YuWar, I'm sixteen years old and I just want to talk about my experience of working with growing green. During the summer I learn more about growing fresh food, team work and how to be able to speak my mind to others. Today I learned how to do cooperation and cooperative businesses and also planting crops. I think growing green project is a good program for young adults to go to and be trained for new experience. Another experience is that they teach us to go out to teach the younger kids about the things we learn. Also growing green teachs us about respecting others peoples rights and a lot more.
Today we are setting up our blog! and planning for a visit from the Tribal Youth Council. We are also working to prepare for the Eat In Act Out Week in August.
We watched a movie this morning, it was kinda boring, it was too educational. Its raining out side so we are inside all day. We talked about what the movie was about, why farmers get booted off their land, about monopolies in the farming industries, how animals die from disease because the are all pack in to the cages real tight. One thing that stood out was a woman who said that farmers only make 3.5c per loaf of bread and it take 6c to grow the grain to make that loaf.
After lunch we played a game where we wrote five things about ourselves on a post it note that we thought no one else would know about us. Then the group had to guess who the post it belonged to.
