INGREDIENTS (Serves: 4)
1 ½ lb large shrimp, peeled and deveined1 package (12.8oz) smoked andouille sausage, thinly sliced
2 ears corn, cut crosswise into 4 pieces
1lb baby red potatoes, halved
2 Tbsp. olive oil
4 tsp. Cajun seasoning
Kosher salt and freshly ground black pepper, to taste
2 Tbsp. chopped fresh parsley leaves
STEPS
- Preheat a gas or charcoal grill over high heat;
- Cut four sheets of foil, about 12 inches long;
- Divide shrimp, sausage, corn, and potatoes into 4 equal portions and add to the center of each foil in a single layer; fold up all 4 sides of the foil packet;
- Add olive oil, cajun seasoning, salt and pepper; gently toss to combine;
- Fold the sides of the foil over the shrimp, covering completely and sealing the packets closed;
- Place foil packets on the grill and cook until just cooked through (about 12-15 minutes);
- Garnished with parsley if desired.
TIPS
- Make your own cajun seasoning by:
- Combining 2 ½ tbsp. salt, 1 tbsp. dried oregano, 1 tbsp. paprika, 1 tbsp. cayenne pepper, 1 tbsp. ground black pepper, ½ tbsp. each of onion powder and garlic powder
- Replace shrimp with any kind of protein that you prefer. If replacing it with chicken, make sure that the chicken is completely cooked before serving.

- Sweet corn contain high amount of insoluble fiber that promote bowel health and may also increase insulin sensitivity.
- Although sweet corn contain higher sugar content, it is considered a food low in glycemic index, which is suitable for people with high blood glucose.
- The carotenoid content from the yellow corn promotes eye health like carrots.
