INGREDIENTS (Serves: 10-12)
4-5 cups fresh corn kernels1 stick unsalted butter
½ cup chopped fresh mint
Salt to taste
STEPS
- Drain the corn and dry with paper towels;
- In a wide skillet, melt half of the butter over high heat;
- Add half the corn and cook, stirring often, until golden and browned (about 10 minutes);
- Stir in half the mint and sprinkle with salt;
- Transfer to a serving bowl to serve;
- Repeat with the remaining ingredients.
TIPS
- Be caution while cooking, since the corn kernels might pop
- Replace part of the butter with olive oil or coconut oil for healthier option, the remaining butter will still give the buttery flavor

- Sweet corn contain high amount of insoluble fiber that promote bowel health and may also increase insulin sensitivity.
- Although sweet corn contain higher sugar content, it is considered a food low in glycemic index, which is suitable for people with high blood glucose.
- The carotenoid content from the yellow corn promotes eye health like carrots.
