Zucchini Patties

INGREDIENTS (Serves: 5 patties)

2 cups grated zucchini well-drained
1 Tbsp. finely chopped onion
¼ cup parmesan cheese
¼ cup flour
2 large eggs
2 Tbsp. mayonnaise
¼ tsp. Oregano
¼ tsp. Salt
1-2 dashes black pepper
1-2 Tbsp. olive oil

STEPS

  1. In a medium bowl mix together all ingredients except for the olive oil;
  2. In a medium to large frying pan over medium heat, heat the olive oil;
  3. Drop a heaping large spoonful of the mixture, cook until browned on both sides;
  4. Drain on a paper towel lined plate for a couple of seconds then serve immediately.

TIPS

  1. Avoid leaving the zucchini too long after mixing with salt. Zucchini contains a lot of water, and adding salt to it will force the water out from the zucchini, resulting in a watery mixture before cooking.
