INGREDIENTS (Serves: 4)
2 Tbsp. unsalted butter1 leek
1 bag frozen peas
3 Tbsp. chopped tarragon
Kosher salt
Ground black pepper
STEPS
- In a saucepan, add chopped leek and 1 ½ cups of water;
- Cook and stir until the leek is soften (about 3 minutes);
- Stir in peas, tarragon, butter, and season with salt and pepper.
TIPS
- Substitute for tarragon include: fresh basil, dill, and marjoram
- You can also replace butter with olive oil, avocado oil, or even greek yogurt with more flavor
- This recipe is good with chicken, steak, and pork. If you are having it with a steak, try saute the leek and pea in the pan the steaks are seared. It will take up the flavor of the steak and enrich the taste.
- You can also add rice, barley, quinoa to make it a vegan bowl with other vegetables.
