Sweet Pea-Leek Pan Sauce

INGREDIENTS (Serves: 4)

2 Tbsp. unsalted butter
1 leek
1 bag frozen peas
3 Tbsp. chopped tarragon
Kosher salt
Ground black pepper

STEPS

  1. In a saucepan, add chopped leek and 1 ½ cups of water;
  2. Cook and stir until the leek is soften (about 3 minutes);
  3. Stir in peas, tarragon, butter, and season with salt and pepper.

TIPS

  1. Substitute for tarragon include: fresh basil, dill, and marjoram
  2. You can also replace butter with olive oil, avocado oil, or even greek yogurt with more flavor
  3. This recipe is good with chicken, steak, and pork. If you are having it with a steak, try saute the leek and pea in the pan the steaks are seared. It will take up the flavor of the steak and enrich the taste.
  4. You can also add rice, barley, quinoa to make it a vegan bowl with other vegetables.
