Napa Cabbage Slaw

INGREDIENTS (Serves: 4-6)

1 medium head of napa cabbage, thinly sliced
4 oz. blue cheese crumbles
¼ white onion, thinly sliced
1 clove garlic, minced
¼ cup olive oil
2 Tbsp. apple cider vinegar
1 tsp. Dijon mustard
1 tsp. Honey
½ tsp. Celery seed
1/22 tsp. Sea salt
Pinch of black pepper

STEPS

  1. Prep ingredients. Thinly slice cabbage and onion. Mince garlic;
  2. Layer napa cabbage, onions, annnd blue cheese in serving bowl and chill until serving;
  3. Whisk together garlic, olive oil, apple cider vinegar, dijon mustard, honey celery seed, sea salt, and pepper until emulsified;
  4. Toss dressing with cabbage and chill for 5-10 minutes before serving.

TIPS

  1. Do not mix napa cabbage with salt early on during the preparation. This will force water out from the napa cabbage and therefore cause the dressing to contain more than desired water.
  2. Instead of whisking, pour the dressing ingredients into a mason jar and shake until emulsified.
  3. Other vegetable will also go well with this recipe, for example carrot and sweet corn.
  4. You can also add beans to the slaw to increase the protein content
