Leek, Golden Beet and Feta Tart

INGREDIENTS (Serves: 3-4)

Flaky Pie Pastry:
50g butter
¼ tsp salt
½ cup white flour
½ cup wholemeal / wholewheat flour
¼ cup cold water (or more)
Filling:
2 leeks, outer green bits removed, thinly sliced
5 cups roughly chopped golden beet leave
20 ml oil
20g butter
4 eggs
200g creme fraiche
1 ½ tsp salt and ground black pepper
200g feta, chopped

STEPS

  1. For pastry, mix butter, salt, flour together until it resembles coarse breadcrumb and then add water and mix. (about the same toughness as play dough, the amount of water added might depend);
  2. Shape the dough into a ball and press to form a disc. Refrigerate the dough while preparing the filling;
  3. After preparing the ingredients for the filling, preheat oven to 200C (400F). Fill the dough disc into a tart pan and put it in a freezer while cooking the filling;
  4. In a frypan, melt butter and oil on medium high heat and toss leeks in, poking them around into an even layer. Stirring occasionally until softened but not yellow. Let it sit for 1-2 minutes until the underside gets golden brown flecks;
  5. Remove leeks, reserve some oil, and cook golden beets on medium high heat until the leaves are wilted and place on same plate as leeks;
  6. Place baking weights on pastry shell and bake the tart shell for 15 minutes;
  7. Beat together egg, creme fraiche, mustard, nutmeg, salt, and pepper;
  8. Remove hot crust from oven, scatter with leeks, golden beet, half the feta, drizzle over the egg mixture, and top with the remaining feta;
  9. Return to oven for another 25 minutes until a knife inserted into the centre comes out clean;
  10. Let sit on a rack to cool for about 10 minutes before serving.

TIPS

  1. Sour cream can be used to substitute the creme fraiche. Soy sour cream, plain soy yogurt, or extra firm silken tofu are some dairy free substitute. Besides feta cheese, ricotta, halloumi cheese, queso fresco, and goat cheese are also good options.
