INGREDIENTS (Serves: 1 loaf)
1 cup blueberries2 cup + 1 Tbsp. flour
1 cup sugar
2 tsp. Baking powder
1 tsp. Salt
1 cup greek yogurt
2 eggs
½ cup butter melted and cooled slightly
1 tsp vanilla
½ cup oats
STEPS
- Preheat oven to 375F. Line a 22x12cm loaf pan with parchment paper or lightly butter and dust with flour;
- In a small bowl, toss blueberries with 1 tablespoon flour to keep blueberry from sinking;
- In a large bowl, whisk 2 cup flour, sugar, baking powder, and salt;
- In a separate bowl, mix yogurt, eggs, melted butter, and vanilla together and then fold into the dry ingredients;
- Add the blueberries and oats and gently combine;
- Scrape the mixture to the loaf pan and bake for 50-55 minutes, golden brown, and when a toothpick inserted into the bread comes out clean;
- Remove from oven and cool in the pan for 5 minutes then cool on a wire rack.
TIPS
- You can substitute greek yogurt with dairy-free yogurt made with soy or nuts.
- You can also use other type of flour, for example whole wheat flour, but remember to alter the amount of liquid needed for the specific type of flour
- Substitute for greek yogurt: whole-fat plain yogurt, sour cream, buttermilk, cottage cheese.

- Blueberry is known for its antioxidant effect and eye benefiting function with its rich anthocyanins content, which is an antioxidant
- The anthocyanins component in blueberry may also benefit in blood glucose control by increasing insulin sensitivity.
- Other than that blueberry is high in vitamin C, vitamin K, manganese, and fiber
