Sweet Cherry Almond Cake


 INGREDIENTS (Serves: 8)


2 cup sweet cherries
½ cup unsalted butter
¾ cup cane sugar
Lemon zest
2 tsp. Lemon juice
1 tsp vanilla extract
¼ tsp almond extract
2 eggs
¾ cup all purpose flour
¼ cup almond flour
1 tsp baking powder
⅛ tsp. Fine sea salt


STEPS

  1. Grease an 8”(20cm) cake pan with unsalted butter or coconut oil; line the bottom with parchment and then grease the parchment;
  2. Pit the cherries. Cut about ¼ cup of the cherries into half and the remaining in quarters;
  3. Preheat the oven to 350F and arrange an oven rack in the center;
  4. In a bowl, add the room temperature butter and sugar. Beat the mixture for about 5 minute with electric beater or until light and fluffy;
  5. Add in lemon zest and juice, and extracts. Add eggs, one at a time, and whisk for about 10-15 seconds each or until each egg is broken up;
  6. Scrape down the bowl; sift in the flours, baking powder, and salt; mix just until combined and no more dry flour is visible.
  7. Stir everything well and bring you cherry jam to a rolling boil and then reduce the heat and leave you jam to cook so that the jam can form and gets reduced (about 30-60 minutes). Stir occasionally and prevent parts from burning;
  8. Test if your jam is set by dropping some of the liquid hot jam on an ice-cold plate. Then turn the plate around to see if the jam is running or set. If the jam is running continue to cook further and repeat the test later again;
  9. The jam setting temperature should be 210 F / 105 C;
  10. Grab clean sterilized jars and lids. Pour 2-3 drops of rum or vodka into the lids to disinfect further;
  11. Pour the jam into your jars up to the rim. Close the jars with the lids and quickly turn the jar upside down to create a vacuum.


TIPS

Wash you lemon by scrubbing it with kosher salt will help with getting off extra dirt that is hidden in the pore. Organic lemon is recommended since the lemon halves are also being cooked.

Sterilize you jar and lids by boiling them in water for a few minutes

Sweet cherries contain high amount of vitamin C and a substance called anthocyanins, which both contributes to an antioxidant and anti-inflammatory effect.

Sweet cherries is also a good source for potassium and fiber

Although not scientifically proved, but sweet cherries were seemed to be helpful with gout by lowering uric acid. And it is also known to promote heart health.
