Cherry Jam without Pectin

INGREDIENTS (Serves: ~3 jars)

2.2lb (about 2 quart) Cherries
1.5 lb sugar
1 lemon

STEPS
  1. Rinse your cherries and discard the stems;
  2. Pit the cherries to collect the cherry pulp ad discard the seed core;
  3. Place the cherries into a large jam cooking pot and pour all the sugar over the cherries;
  4. Cut your lemon into two, squeeze out the juice and pour juice over cherries and sugar;
  5. Drop the lemon halves into the pot; mix the fruits and sugar and keep on the heat;
  6. Stir everything well and bring you cherry jam to a rolling boil and then reduce the heat and leave you jam to cook so that the jam can form and gets reduced (about 30-60 minutes). Stir occasionally and prevent parts from burning;
  7. Test if your jam is set by dropping some of the liquid hot jam on an ice-cold plate. Then turn the plate around to see if the jam is running or set. If the jam is running continue to cook further and repeat the test later again;
  8. The jam setting temperature should be 210 F / 105 C;
  9. Grab clean sterilized jars and lids. Pour 2-3 drops of rum or vodka into the lids to disinfect further;
  10. Pour the jam into your jars up to the rim. Close the jars with the lids and quickly turn the jar upside down to create a vacuum.


TIPS
  1. Wash you lemon by scrubbing it with kosher salt will help with getting off extra dirt that is hidden in the pore. Organic lemon is recommended since the lemon halves are also being cooked.
  2. Sterilize you jar and lids by boiling them in water for a few minutes
  3. Remember to store you jam in a refrigerator one it is opened, and should be finished within weeks
  4. Sealed jam can last for 10 months in dry and cool place away from sunlight.

  1. Sweet cherries contain high amount of vitamin C and a substance called anthocyanins, which both contributes to an antioxidant and anti-inflammatory effect.
  2. Sweet cherries is also a good source for potassium and fiber
  3. Although not scientifically proved, but sweet cherries were seemed to be helpful with gout by lowering uric acid. And it is also known to promote heart health.
