INGREDIENTS (Serves: 16)
2 cups blueberries
1 cup granulated sugar
1 Tbsp. fresh lemon juice
¼ tsp. Ground fennel
2 ends of a lemon
STEPS
- Add blueberries, granulated sugar, fresh lemon juice, and ground fennel to a saucepan;
- Cut the ends of one lemon and add to the saucepan as well;
- Mix well and heat over medium heat;
- Stir occasionally for 20-25 minutes;
- The jam is ready when it reaches 220F, or when it is not runny when dropped on a cold plate;
- Take out the lemon ends and pour the jam into sterilized jars.
TIPS
- Sterilize your jar by boiling it in hot water for a few minutes.
- The jam can store for 6 month without opening.
- Store your jam in dry and cool spot away from sunlight.
- Once opened, store your jam in a refrigerator

- The anthocyanins component in blueberry may also benefit in blood glucose control by increasing insulin sensitivity.
